Where the grades fall in different levels.
A different level is a difference in the measure, not a verdict on either place. What matters depends on your own circumstances.

Questions about France vs Italy for fifo workers.
Which residence permits might fit a rostered job abroad in France or Italy?
No source says whether a rostered job abroad counts as work in either country. France: the visitor card forbids work (more than €1,500 net a month, to be safe); a freelance card is separate. Italy: the remote worker visa asks more than €28,000 a year, to be safe; elective residence allows no work. Ask each consulate.
Would a rotation worker be tax resident in France or Italy?
France: you are resident if your home or main place of stay is there, you work there other than incidentally, or your main economic interests are; over six months generally counts. Italy: for most of the year (183 days) you are registered, domiciled or present. Australia tests residence, domicile and 183 days.
Which tax treaties cover an Australian or New Zealand rotation worker?
Australia and France signed a treaty in 2006 (in force 1 June 2009); Australia and Italy have a 1982 convention (in force 5 November 1985). New Zealand's 1979 agreement with France decides dual residence by permanent home, then closer ties; its 1979 agreement with Italy took effect 23 March 1983.
What health cover does a rotation worker need in France and Italy?
Victoria's health department lists Italy among Australia's reciprocal healthcare agreements, not France; its cover is unknown here. France's public cover (PUMa) opens 3 months after you arrive if you don't work, and needs 6 months a year there. Italy's remote visa needs at least €30,000 of insurance (US, Wellington).
Is internet good enough to use between swings in France and Italy?
France has 48.9 fixed broadband subscriptions per 100 people and Italy 31.8 (2024, ITU via the World Bank). Those are national counts, not speeds, so quality at a given address is unknown. Confirm what a provider can connect there before you sign a lease.
